Cosy Clothing, Sticky-Spicy Nuts and Weekend Wine
How are you all going? Not going to lie it’s been a long week over here, so we’re trying to focus on all the things we’ve managed to enjoy. This week’s ep is stuffed full with as much Iso goodness as humanly possible. Cooking projects that aren’t pasta or sourdough! Cosy clothes options if you’re sick of wearing leggings! Young Nicholas Cage! We really want to emphasise that last one!

Looking for an all afternoon cooking project? Try SoRo’s pork belly carnitas (warning, not for the faint of heart):
500g of pork belly in cubes (about 2cm x 2cm) - remove the skin/rind or ask the butcher to do it for you. Keep as much fat as you can
1 cup orange juice
1 tbsp cumin
1/2 tbsp crushed fennel seeds
1 tbsp garlic powder
1 tbsp oregano
1/2 tsp cinnamon
Salt
2-3 bayleavesCombine and marinate for at least 1 hour then let sit out of the fridge for 1 hour
1/4 cup vegetable oil
1 green chilli thinly sliced
1/2 onion thinly sliced
3 smashed garlic cloves
1 bottle of beer - something light, like a (lol) corona or modelo
1.5 tbsp honeyAdd oil to a large Dutch oven and heat over medium high til bubbling
Add pork and brown off a little bit
Add marinade and bottle of beer and onion,chilli and 3 smashed cloves and honey
Being to boil and then reduce heat to simmer
Skim scum off the top with a spoon while letting it simmer for 2 hours
Increase heat and let simmer at a higher temp for 20 minutes, pork should be tender enough that a fork can slice through it
Heat oven to 180-200
Take pork out of the marinade and put into a small roasting dish
Skim some of the fat from the marinade (about a tblsp) and toss the pork pieces in it
Roast in oven and until crispy (15-20 mins?) keep an eye on it and stir every now and then to get crispy on all sides.
Meanwhile, reduce the braising liquid in the pot till its thick and delicious - you can mix a couple of tablespoons through the crispy pork at the end. You can also use it as a condiment on the pork (you’ll have way more than you need).
Serve with tortillas, and any of the following: charred spring onions, chopped tomato salsa, quick pickled red onions, hot sauce, lime quarters, coriander, avocado. Just make sure there’s something zingy to cut through the fat.

Alison Roman’s sticky, sweet spiced nuts from her book Nothing Fancy. Tahini, maple syrup, sesame seeds, sumac, olive oil, sea salt! So good just to snack on, but also yum in like a pear, blue cheese, radicchio salad situation.
Such a Fun Age by Kiley Reid - SoMo could not put this book down.
